B&W basic exposure

I'm shooting a golf tournament in Black and White and I'm not sure about which f-stops and shutter speeds are equal and will change the depth of field. If 250th sec. at f-5.8 gives a clear background, what f-stop and shutter speed should I use to isolate the subject and blur the background?

Well, this is really a question of camera to subject & subject to background distance. In order to blur the background out shooting full length, you are going to have to be somewhere around an f/2.8 or f/2, using a lens in the range of 200mm or 300mm, this is going to put you approx. 46' for 200mm and 70' for 300mm lenses. Keep in mind, this is not the only way to blur the background. The answer to your question is, if you shooting @ 1/250sec at f/5.8, you will need to shoot at:
1/500sec @ f/4
1/1000sec @ f/2.8
1/2000sec @ f/2
