Aperture and Metering Although I have used the metering recommended by the camera, I am still not happy with the outcomes of some pictures. Some faces still dark although I overexpose it using 1 or 2 stops. Why is that so?

If most pictures are turning out okay, your meter is probably working correctly. However, it can only estimate the required aperture and shutter speed; you need to look at each scene and decide if it is very dark or very light. It may be that the difference in light value between the faces and the surrounding area is too extreme, that there is more contrast than camera and film can capture. To reduce this problem, fill more of your frame with the face and/or use a reflector to bounce light back into the face, to fill shadows.

Move in and take a reading of the face. Use your exposure lock and back up and take the picture or after the reading. Set the camera to manual and set it to the exposure you got for the face.
