For prints, I would multiply whatever size you want by at least 150 and perhaps up to 300 if you want especially high resolution prints. That means 750 x 1050 for 5x7 (which translates to 1024 x 768 in digital camera terms). For Web images, multiply the dimensions by 72. A 2x3 image on the Web would require 144 x 216. Any digital camera should be able to do that.
