How to manually adjust shutter speed with flash

I have a canon 20D digital camera with a canon 580ex flash.
How do I manually adjust my shutter speed to shoot faster than 1/250 with the flash attached?

The 580EX needs to be set for FP High Speed Sync mode. Press the "lightning bolt" H/>> button so that the "lightning bolt H" appears in the speedlite's LCD (upper left next to ETTL).

I didn't know the flash would sync beyond 1/250th. Does that actually work?
