Use Kodak Tri-X. It's probably the best "universal" B&W film. It's got an ISO-400 rating. Kodak T-Max films offer less grain and, depending on what you're final desired result may be, is the the film you'll grow toward. It's available in several ISO-speeds. Ilford makes several great B&W - they're comparable to the similar Kodak films but are more difficult to find.

Regular one hour shops do not do traditional b&w developing (Tri-X, T-Max, most of Ilford's offerings). They are set up to do C-41 color print processing. There are some very good black and white films that are made for C-41 developing and printing on color paper: Ilford XP2 Super 400 and Kodak BW400CN (also goes by "Black & White 400") being the most popular. The 1-hour shops print this film on color paper, so to prevent sepia (or blue or green) tinting you need to tell them to print as black & white without toning. And the shop personel have to be competent enough to adjust their printers to do that. ;-) Better photo processors will print these on b&w paper if requested (may be an extra charge).
