Metering for Concert Photos


I have been offered to take photos at an old time country music festival in a hall here in town. They used white stage lighting. I am worried about metering and exposure. I was planning on renting an f2.8 lens but not sure how long of a lens to use. I think I will be able to get pretty close. I was also going to use 800 speed film and maybe a monopod. Should I set my camera to matrix metering or should I use spot metering to meter off the performers skin tones? If I am metering off the skin tones should I be adjusting the exposure to +1 from the reading my meter tells me?
