Tips on shooting a Sunset Wedding

I am shooting a sunset wedding outside in October. I am using film for the first time in a long time. With my practice shooting, I am finding beautiful colors in the background but an underexposed foreground. Tips? Also, if I scan my film based photos for use in photoshop, will I compromise quality?

You're going to have to meter off the subject in the foreground. The background light is so strong the meter is reading more of it than the foreground.
